Tomato & Walnut Crackers

Here’s a recipe I’ve been making for decades from this cookbook, from the Mayo Clinic and Williams Sonoma.

 4 Sun-dried Tomatoes, Not oil-packed
 2 cups Boiling Water
OR
 2 tbsp Oil Packed Sun Dried Tomatoes, pressed dry

 ½ cup Whole Wheat Flour
 ½ cup White Flour
 1 tbsp Sugar
 ¼ tsp Salt
 ½ tsp Baking Powder
 ¼ tsp Cayenne Pepper
 2 tsp Dried Thyme
 1 Egg
 1 Egg White
  cup Finely Diced Walnuts

Two approaches here;
1. Pour 2 cups boiling water over dried sun-dried tomatoes. Let stand for 3 minutes.
Wrap in paper towel to get the moisture out.
2. Wrap 2 tbsp. sun-dried tomatoes packed in oil in a few layers of paper towels. Squeeze to get the oil out.

Dice the tomatoes to 1/4" pieces and less.
Dice the walnuts.

Combine all ingredients.

Roll out between parchment paper.
The parchment paper isn't necessary, but it sure aids in clean up!

Bake in a 350 degree oven for 10 minutes.
Turn and bake an additional 10 minutes.
Cool and break apart.
Store in a airtight container when completely cool.
