Tomato Basil Soup With Beans

Do you love my soup pot?   😉
I’m not your normal blogger. No Staub or Le Creuset for me. Just a simple aluminum pan picked up at the thrift store.  I bought it specifically for stove top popcorn. It works great for that. I end up using it all the time.

 3 tbsp Olive Oil
 1 Large Russet Potato, Diced
 1 Medium Onion, Diced
 1 15 oz. Can Diced Tomatoes
 1 tbsp Coriander
 1 tsp Paprika
 1 tbsp White Vinegar
 5 cups Vegetable Broth
 4 oz Fresh or Frozen Spinach
Process Separately in Food Processor
 3 Cloves Garlic, Minced
 1 cup Diced Fresh Tomatoes
 1 oz Fresh Basil Leaves
Add At The End
 1 15-oz Can Cannellini Beans
 1 15 oz Can Black Beans
 ¼ cup Heavy Cream

Dice potatoes and onions.
Heat olive oil and saute the potatoes and onions for about 4 minutes.

Add the can of tomatoes, vinegar and spices.
Saute for another 4-5 minutes.
Add the vegetable broth and simmer for 10 minutes.

I did a bit of blending with the stick blender. Just do enough to thicken the soup. This step isn't necessary. It's personal preference.
Place the fresh tomatoes, basil and garlic in a food processor and blend.
Add to the soup.
Add the spinach.
Simmer for another 5 minutes.

Drain and rinse the beans. Add to the soup.

Finish with 1/4 cup heavy cream.
