Taiwanese Beef Noodle Soup

Recently, on a travel show I watched an episode about the food of Taiwan and the popularity of Beef Noodle Soup.
Here’s a very detailed and time consuming recipe. Well worth it!

Aromatic Chinese Herb Packet
 4 Star Anise
 1 Cinnamon Stick
 3 Bay Leaves
 1 tbsp Fennel Seeds
 1 tbsp Cumin Seeds
 1 tsp Coriander Seeds
 2 tbsp Sichuan Peppercorns
 ¼ tsp Black Pepper
 ¼ tsp Five Spice Powder
Soup Base
 2 tbsp Oil
 6 Cloves Garlic, smashed
 1 2" Section Ginger, quartered and smashed
 2 Scallions, Cut in 2" sections
 1 Onion, quartered
 1 Tomato, cut in wedges
 4 Dried Chilies, sliced in half and seeds removed
 1 tbsp Tomato Paste
 2 tbsp Gouchang Red Pepper Paste
 2 tsp Sugar
 ¼ cup Soy Sauce
 ¼ cup Shaoxing Wine
 3 lbs Beef Shank, I prefer bone-in
Additional Ingredients
 Noodles of your choice
 Baby Bok Choy
 Cilantro

This step isn't necessary, but will result in a clear broth.
Cut the beef into 2" cubes.
Bring a large pot of water to boil. Add the beef, bring back to a boil for 1 minute. Drain and rinse.
Set aside.

Prepare the garlic, ginger, onions and scallions.
If using an InstaPot, set on saute, place 2 tbsp. oil in to heat and add the garlic, ginger, onion and scallions.
Saute for a 5-7 minutes. Don't brown!

I purchased a prepared Pho spice packet in place of the Aromatic Spice Packet.
If using your own ingredients, place them in a cloth bag or cheesecloth tied together.
I spent a good amount of time looking for Sichaun Peppercorns. I finally asked someone and he brought me to a package of "Dried Prickly Ash". I would have never known!

Add all the rest of the ingredients, except the beef.
Bring to a simmer for about 3-4 minutes.
Add 8 cups water.
Add beef.
If making in an InstaPot, use the Stew setting and set for 85 minutes.
If making on a stove top, Set to a low simmer for 3 hours.

On the stovetop, bring water to a boil.
Add the noodles of your choice.
Within the last 4 minutes of cooking, add the Baby Bok Choy.
Drain and serve together - broth, beef, noodles, bok choy and cilantro.

Taiwanese Beef Noodle Soup

Want a shortcut soup?
Combine equal parts beef and chicken bouillon to your taste. If making 2 cups broth, 1 tsp of each.
Add 1/4 tsp of Chinese Five Spice Powder.
Add the noodles of your choice and simmer.
Add veggies if you’d like.
