 1 qt Vodka
 8 Lemons
 4 cups Water
 3 cups Sugar

Grate or peel your lemons.
I used a peeler for this. You can use a grater, but I found this much easier.
Avoid getting any of the pith, so very thin strips!

Put your lemon peel in a quart jar and top it off with vodka.
Let it sit on the counter at room temperature for a week.

There was a lot of lemon juice!
I froze it in an ice cube tray. When frozen, pop them into a ziploc bag.

After one week, make a simple syrup:
Combine 3 cups water and 2 cups sugar in a saucepan.
Heat until all the sugar is dissolved. You don't need to boil it. This should only take a few minutes.
Let it cool completely.
Combine the simple syrup and your lemon-peel infused vodka and let it sit on the counter for 24 hours.
Strain, bottle and refrigerate.
I put mine back in mason jars!
A nice bottle and label and you'd have a great gift.
