Hungarian Mushroom Soup

 4 tbsp Butter
 2 cups Diced Onions
 1 ½ lbs Sliced Mushrooms
 2 tsp Dried Dill Weed
 1 tbsp Paprika
 1 tbsp Soy Sauce
 3 cups Beef Broth
 ½ tsp Salt, or to taste
 ½ tsp Pepper
 ½ cup Sour Cream or Full Fat Greek Yogurt

Melt butter in your soup pot over medium heat.
Saute the onions for 5 minutes.

Add the mushrooms and saute for 5 more minutes.
Stir in the dill, paprika, soy sauce and broth.
Reduce heat, cover and simmer for 20 minutes.
You can leave the soup as is, or make a thickener.
Leaving it as is, will be less calories and less need to have a processed ingredient in your soup. If you want to thicken it, blend 1/2 cup milk and 3 tbsp. flour together.
You can also try a little Xantham Gum. Sprinkle 1/2 tsp. over the soup and stir.
Lastly, stir in 1/2 cup sour cream.

All set for 3 large lunches for the week!
Paprika, dill and sour cream give this mushroom soup a incredible flavor.
The recipe will make 4 regular size bowls.
I did not thicken the soup, so it’s very healthy.
