Herb Blend for Roast Pork

If your a big fan of Porketta, this herb mixture for pork is the ticket!

 2 tsp Salt
 2 tsp Rosemary
 1 ½ tsp Oregano
 1 ½ tsp Thyme
 1 ½ tsp Sage
 ¼ tsp Black Pepper
 ¼ tsp Nutmeg
 ½ Medium Onion
 4 Carrots

Mix your herbs together.

Pick a pork butt that has a nice layer of fat on top.
With a sharp knife, slice the fat layer off.
On the side with the fat, make 1/2" deep slits in the roast.
Rub the entire roast with the herbs, placing it in the slits.
Place the fat layer over the roast.
Slice the onions and place them in the bottom of your pan, along with big chunks of carrots.
