Harvard Beets & Greens

My first trip to the farmers market this season!
Fried green tomatoes are in my future, but first, we’ll fix the beets and greens.

 1 Bunch of Beets With Healthy Greens
  cup Water
 1 tbsp Butter
  cup White Vinegar
 ¼ cup Sugar, or more to taste
 1 tbsp Cornstarch
 3 tbsp Water

Clean the beets under running water.
Trim both ends.
Bring to a boil, and then simmer until soft, about 30 minutes.
Remove from the water, let cool for a bit and remove skins.
They'll slip right off!
Dice into bite-size pieces and set aside.

Cut the greens into 3/4" cross sections.
Trim away the longer stems. Maybe keep some stems about 2" long.
Place 1/3 cup water in a larger pan and add the greens.
Cover and cook down.

Move the greens to the side and add the butter, sugar and vinegar.
Mix the cornstarch with the additional cold water.
Add to the pan and bring to a simmer to thicken.
Add the diced beets.

Fried green tomatoes and these Harvard Beets were a filling and fabulous dinner!
Add a slice of good whole grain seeded bread or finish off your  meal with a cookie.

I made a batch of these Chocolate Cookies with Avocado a few weeks ago.

They keep well in the freezer and are delicious frozen!
