Farro Pilaf

The package of mushrooms were staring at me for over a week whenever I opened the fridge.
Decided that risotto would be a good idea and then thought of the Farro that’s been in the cupboard forever!
This became larger lunches for 3 days and was delicious.
Easy. Delicious. Used up ingredients that have been around too long. What’s not to love?
Even the peas were in the freezer for too long. Still tasted good.

 1 cup Farro
 1 tbsp Butter
 1 tsp Oil
 ½ cup Diced Onions
 2 Minced Garlic Cloves
 8 oz Fresh Mushrooms
 ½ cup Vegetable Broth
 ¼ cup Grated Parmesan Cheese

I cooked the Farro in my Instant Pot.
1 cup Farro and 3 cups water on the Porridge setting for 25 minutes.
Stovetop would take about an hour and of course that's OK, too!

Heat the oil and butter on med/high.
Add onions and saute for 4-5 minutes.
Add the garlic and mushrooms and saute until soft and fragrant.
Add the broth. I use the Better Than Bouillon brand all the time.
You can use beef, chicken or vegetable or a combination.
I used 1/2 tsp. to 1/2 cup water. Bear in mind that this is where you'll get your salt.
Add the Farro.
