As I’ve said earlier, I’m a paycheck to paycheck kind of gal.
So far it’s been OK, but there’s not a lot of room to save and take a bona fide vacation. It may never be in my future and I have to make my peace with that. Are you in the same boat?
So you take what you can get.
Earlier this week, I drove down to Minneapolis. My daughter was flying in for a 20 year class reunion, and my son lives there. I had said I needed to get down there to visit my son for awhile, but having the money for a hotel room and more than likely paying for food for my son and I was an impediment. When my daughter called and suggested I come and stay with her, it was the perfect opportunity! I didn’t need to shell out for a room and she rented an apartment so we could cook.
I packed food for our evening meal – A salad that uses a made-from-scratch salad dressing and a pasta dish that was delicious!

Melt butter, add chopped kimchi, boil noodles (any kind you have in the cupboard) and combine!
I didn’t add the scallions and sesame seeds. It’s not necessary. The kimchi alone adds enough depth of flavor and keeps things simple.
We had an interesting beer tasting sampling.
The next day, we visited some outdoor venues in Minneapolis/St. Paul.
- Fort Snelling State Park and the historic site ( I have a yearly state park pass!)
- Minnihaha Falls
- The Stone Arch Bridge
