Chocolate Cookies with Avocado

Cookie Ingredients
 ½ cup Mashed Ripe Avocado
 ¼ cup Sugar Free Maple Syrup
 ½ cup Nut Butter
 1 Egg
 ½ cup Unsweetened Cocoa Powder
Frosting Ingredients
 2 tbsp Softened Butter
 2 tbsp Softened Cream Cheese
 1 cup Swerve Powdered Confectioner's Sugar
 ¼ cup Unsweetened Cocoa Powder

Combine all the cookie ingredients in a food processor and blend thoroughly.
I used Almond Butter. Peanut Butter or Sunflower Butter would work just as well.
I mixed my in a bowl with a stick blender - I was trying to avoid the dirty dishes!

Grease a sheet of parchment on a cookie sheet.
Drop the cookies, about 2 tbsp of dough per cookie, on the sheet using two spoons. Press down with the spoon to about 1/2" high.

Bake for 15 minutes in a 350 oven.

Mix your frosting ingredients and pile it on thick!

Chocolate Cookies With Avocado

I made these very early in the morning – still a bit dark out, so the photo could be better.
Chopped Hazelnuts made a great addition. Almonds or walnuts would be just as good.

I found the Waldon Farms Pancake Syrup when I was on Keto.
For me, the jury is out on the safety of any artificial sweetener. Not sure if it’s any better than sugar.
I enjoy a little sweet treat every once in awhile. I was susceptible to sugar cravings before I tried Keto. I’m not sure if I will stay true to my new way of eating – much, much less sugar, to the point of ALMOST sugar-free.  I sure am going to try.

I put these cookies in the freezer. Just like most cookies – They tasted great frozen!
