Cauliflower Curry

This recipe is one I discovered when I was doing Keto.  I added Shiritaki noodles to give it more body.
I would add rice now, or leave it as is- OR do the Shiritaki again!
I’ve made it with shrimp, chicken and tofu.

Spice Blend
 2 tbsp Curry Powder
 1 tbsp Cumin
 2 tsp Garlic Powder
 1 tsp Chili Powder
 1 tsp Onion Powder
 1 tsp Cayenne
 1 tsp Paprika
 ½ tsp Ginger
 ½ tsp Coriander
 ½ tsp Tumeric
 ¼ tsp Cardamom
 ¼ tsp Cinnamon
 ¼ tsp Xantham Gum
Vegetables
 1 Medium Onion
 ½ Head Cauliflower
 5 cups Raw Spinach
Broth and other ingredients
 2 tbsp Oil Of Your Choice
 3 cups Chicken Broth
 1 cup Coconut Milk
 ¼ cup Butter
 ¼ cup Cream
Protein
 16 oz Raw Shrimp
 2 cups Diced Raw Chicken

Combine all spices and the Xantham Gum

Cut the onion into slices.
Heat your oil in a pan. Add the onions and cook until soft.
Add butter, cream and the spice blend. Cook for about 2 minutes.
Add the chicken stock and coconut milk.
Cook for 30 minutes.
Cut your cauliflower into bite-size pieces.
Peel the shrimp, and cut in half.
Add the cauliflower and cook an additional 20 minutes.
Add the shrimp and spinach.
