Cabbage Rolls

 1 Head of Cabbage
 1 lb Ground Beef
 1 cup Diced Onions
 5 Slices Bacon
 2 cups Cooked White Rice
 1 15 oz. Can of Diced Tomatoes

Remove the core from the head of cabbage.
Place in a pot of water and bring to a boil.
Loosen the outer leaves as they cook and place them aside.
Don't overcook. Just cook enough to loosen and keep in the simmering water an extra minute. As I took them out, I placed them in the 9 X 13 pan I would eventually use. Then when all where done, I drained the water from the pan and placed the cabbage leaves back.
Meanwhile cook 1/2 to 3/4 cup white or brown rice using your preferred method.
Set aside.

Slice the bacon in 1/4" wide slivers and saute them for a few minutes.
Add diced onions. Saute for about 5 more minutes.
Add the ground beef and cook until cooked through, stirring often. Drain the fat, and set aside.
Combine the ground beef mixture and your rice.
Season liberally with salt and pepper.
I threw a finely diced zucchini that was in the fridge in, just to use it up. It's not going to change the flavor, so why not?

Lay a cabbage leave out and place about 1/4 cup of the mixture inside.
Fold the sides and roll.
Place in a 9 X 13 pan.

Pack them in, but not too tight.
Pour a can of diced tomatoes on top.
Bake at 350 for . Cover for the first 30 minutes.
Uncover and bake for additional 30 minutes.

Side Note: I realize there are a lot of pans in use. ;(
I washed them as I used them. Helped a lot.
