Bahn Mi Sandwich

Pickled Vegetables
 1 cup Julienned Carrots
 1 cup Julienned Daikon Radish
 2 tbsp Sugar
 ½ tsp Salt
 3 tbsp Rice Wine Vinegar
 2 tsp Sesame Oil
Meatballs
 1 lb Ground Pork
 2 tbsp Chopped Cilantro, Basil or Parsley
 1 Chopped Scallion
 3 tbsp Minced Garlic
 1 tbsp Sriracha
 1 tbsp Fish Sauce
 2 tsp Sugar
 1 tbsp Cornstarch
The Dressing
 ¼ cup Mayo
 2 tsp Sriracha

Julienne cut the carrots and daikon.
Combine the rest of the ingredients in a quart mason jar. The vinegar will dissolve the sugar in about 15 minutes. When it's clear, add the vegetables.
This will keep in the fridge for a few weeks.

Put all of the meatball ingredients in a bowl and then add the pork. Mix well with your hands.
Shape into 1" diameter balls or do patties as I did. Your taste buds won't know the difference!
Freeze for about 20 minutes to congeal the fat and hold the balls/patties together better while frying.
Fry them in a little bit of hot oil.

Banh Mi Sandwich

Mix the mayo and sriracha.
Assemble the sandwich.

I took some sliced bread out of the freezer.
This sandwich is traditionally done with a good roll, but I’m saving some time and money here without any loss of quality.
I think the star of this sandwich is the daikon/carrot relish. I piled in on even higher than in the photo! I also think it would be great on any burger and especially on a veggie burger.

I made three additional patties, wrapped them individually in wax paper and put them in a ziploc freezer bag.
